Originating from Chicago, Russell Grabe’s interest in cooking began at a very young age. His passion in life has always been in the restaurant business. After graduating high school, Grabe enrolled in The Culinary School of Kendall College in Evanston, Illinois. While mastering his skill, Grabe had the opportunity to join the restaurant group of Paul LoDuca, and began working at one of his properties, Vinci. After completion of culinary school, Grabe continued his education at Purdue University in West Lafayette, Indiana. After two years of work, Grabe received his bachelor’s degree in hotel, restaurant and tourism management from Purdue University and was anxious to continue his professional career. Grabe returned to Chicago and was appointed Sous Chef at Maré, a sister restaurant of Vinci, located in the Marina City district of Chicago. Grabe continued his five year journey with Paul LoDuca until joining forces with The Lettuce Entertain You Group. Having the opportunity to open a new concept “Ben Pao”, Grabe took on the endeavor of upscale Chinese food with a focus on the mandarin style. Looking for a change of scenery, Grabe ended an extremely beneficial relationship with Ben Pao and ventured to the West Coast, landing the executive chef position at Foundation Room® Sunset Strip. After a brief year and a half on the Sunset Strip, Grabe was granted a great opportunity of opening Foundation Room Las Vegas. After nine years in Las Vegas, Grabe remains thankful each day for the opportunities he has been granted and always remains committed to the strong passion he has for his art.
